Springdale’s 7 Brew wins bankruptcy auction for 73 Salad and Go locations

Springdale-based 7 Brew has successfully bid $143.2 million to acquire 73 Salad and Go locations out of bankruptcy, pending final court approval slated for Sept. 21. The deal marks a significant expansion for 7 Brew, which started in Rogers in 2017 and has rapidly grown to more than 800 stores across 38 states.

The acquisition, still subject to potential objections before the bankruptcy judge’s ruling, would add Salad and Go’s footprint to 7 Brew’s already fast-growing enterprise. While the two companies offer very different menus—7 Brew focused on drive-thru coffee and canned beverages, and Salad and Go known for quick-service salads—their business models both serve busy customers looking for convenience.

7 Brew’s initial Rogers store launched seven years ago, setting off a swift upward trajectory. The company hit the notable milestone of 500 stores by October last year and recently secured a deal to sell its canned coffee products in Walmart stores nationwide after a pilot rollout in Arkansas. That kind of reach is impressive—if you think about what it would take to get shelf space at Walmart in a major city, it’s a huge validation of 7 Brew’s appeal and supply chain strength.

Expanding by buying an entire bankrupt chain’s locations gives 7 Brew a strong shortcut to entering new markets and scaling rapidly without building each store from scratch. The move reflects a broader trend in Northwest Arkansas of homegrown companies growing into national players, though it’s still rare to see deals of this size come out of here. The price tag alone, $143.2 million, signals serious financial muscle for a company still in its early growth phase.

While 7 Brew has not responded to requests for comment, its recent corporate moves suggest it’s preparing infrastructure to manage such growth. Last December, 7 Brew hired its first Chief Financial Officer, Matthew Dunnigan, and its first Chief Supply Officer, moves that align with needing seasoned leadership to handle expansion and integration of new assets.

For local consumers, the acquisition may eventually mean more access to both convenient coffee and fast, fresh food options under one umbrella. It could also signal new employment opportunities in Springdale and the broader region as 7 Brew integrates these 73 additional locations. In cities where fast-casual chains struggle to scale affordably, this kind of growth coming out of NWA quietly rewires the quick-service landscape.

Salad and Go filed for bankruptcy earlier this year, reflecting the tough economics many fast-casual concepts face even when they have loyal followings. 7 Brew’s approach, focused so far on beverages and streamlined operations, might provide the stability and capital to revive those salad locations and keep them humming. If the judge signs off on the deal by late September, this chapter could turn into a real win for NWA’s economy.
